Summertime Bone Broth Cleanse Part 1 – Day 1-3

Summa, Summa time, Summa time!

When some people think of eating summertime food they are imagining light meals or something easy to fire up on the grill. I’m not going to provide either of those, ha! Mainly because I don’t have a functioning grill at the moment, but also because a good soup or chili can be a meal for days or frozen for future dinners. Nonetheless, all these meals are made with delicious Osso Good Bone Broth and they are all paleo for the 7-day Bone Broth Cleanse.

Day 1

Osso Good Corn Chowder

Ingredients

  • 2 tablespoons butter or Ghee
  • Coconut oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 6 sprigs fresh thyme, leaves only
  • 40 oz. of Osso Good Chicken Broth
  • 1 cup of almond milk
  • 2 Yukon gold potatoes -peeled and diced
  • 2 Large Carrots -sliced
  • 6 ears corn
  • Salt and freshly ground black pepper
  • 1/4 cup chopped fresh parsley leaves

Preparation

First, heat the butter and 1 tablespoon olive oil in a soup pot over medium heat. Then add the onion, garlic, and thyme and cook until the vegetables are good and soft, 8 to 10 minutes. Then pour in the Osso Good Chicken Broth and bring to medium simmer. Add the almond milk and the potatoes, bring to a med boil for about 15 minutes, until the potatoes break down (this will help to thicken the soup and give it a good texture).

Secondly, cut the corn kernels off the cob (or frozen corn) and add to the soup. Season with salt and pepper and simmer until the corn is soft, about 10 to 12 minutes
This is the time I use an emersion blender to blend some of the mixture which also thickens the soup.

Stir in the parsley and give it another little drink of olive oil. Ladle the soup into bowls and serve.

Day 2

West African Cashew Soup

Ingredients

  • 3 tablespoons light olive oil or avocado oil, divided
  • 1/2 cup raw cashews, chopped
  • 1 large onion, cut into small dice
  • 2 tablespoons peeled and grated fresh ginger
  • 1-1/2 pounds boneless, skinless chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon ancho chili powder
  • 1/2 teaspoon ground cumin
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground coriander
  • 1/2 teaspoon fenugreek seeds
  • 1 teaspoon turmeric powder
  • 1 (14 ounce) can diced tomatoes
  • 2 tablespoons tomato paste
  • 1 pound sweet potatoes (about 2 medium), peeled and cut into small dice
  • 1 bunch kale (about 1/2 pound), stemmed and cut into 1-inch pieces
  • 8 cups Osso Good Chicken Bone Broth
  • 2/3 cup roasted, unsalted Cashew butter

Preparation

First off, heat 2 tablespoons of the oil in a large soup pot over medium heat. Next when the oil is hot, add the cashews and cook, stirring constantly, for 2 to 3 minutes, until toasted and fragrant. Remove the cashews and set aside. Secondly, add the onion and cook, stirring often, for about 5 minutes, until golden brown and softened. Add the ginger and cook for another minute, stirring constantly. Next, add the remaining tablespoon of oil to the pot, then add the chicken. Cook until the chicken is opaque on all sides, about 5 minutes. Stir in the salt and spices and cook for another minute, stirring constantly.

Add the diced tomatoes, tomato paste, sweet potatoes, kale, and 6 cups of the bone broth. Bring to a simmer and cook until the sweet potatoes are tender and the chicken is cooked through, about 10 minutes. Next, stir in the cashew butter and cook for 2 to 3 more minutes, until the soup has thickened. Add up to 2 cups more broth if you prefer a thinner soup. Serve garnished with the toasted cashews.

Day 3

Osso Good Carrot Soup

Ingredients

  • 2 pounds peeled carrots, cut into 1 inch pieces
  • 1 large onion, thinly sliced
  • 4 garlic cloves minced garlic
  • 1/2 cup of Cashews
  • 20 oz. of Beef Bone Broth
  • 4 strips of bacon cooked and chopped
  • 1 tablespoon of thyme
  • 1 tablespoon of fresh rosemary
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon hot sauce

Preparation

Place oil in large pot over medium heat. Add carrots, onions, garlic, thyme and rosemary. Cook for 15 minutes, until carrots are fork tender. Remove herb sprigs and transfer carrots and vegetables to a Vitamix. Next, add bone broth and to puree till smooth. Transfer to large saucepan over medium heat and add bacon strips. Season with salt, pepper and hot sauce. Simmer until ready to serve.
